5 Ways To Add Twist To Your Boring Pani Puri

Pani puri has truly crossed all land boundaries and is a household name in almost any region of the world. So much so that its variations over the years have lent themselves to killer gourmet fusions, alcohol mixers and even some desserts! Here are some of the best gastronomic transformations of the kickass Pani puri!

* Pani Puri With Black Grape Twist

Ingredients


Puris Meant for Pani puri as required, Black grape juice 1 litre, Tamarind pulp 2 tablespoons, Salt to taste, Black salt (Kala namak) 1/2 teaspoon, Roasted cumin powder 1 teaspoon, Red chilli powder 1 teaspoon, Lemon juice 1 tablespoon, Fresh mint leaves bunch 1/2 medium, Fresh coriander leaves bunch 1/4 medium, Green chillies 3-4, Moong sprouts as required, Potatoes boiled and mashed as required

Method

Grind mint leaves, coriander leaves and green chillies into a fine paste. Mix together fresh black grape juice, the ground paste, tamarind pulp, salt, black salt, roasted cumin powder, red chilli powder and lemon juice. Chill in the refrigerator till use. If you want to, you may fill each puri with a little sprouted green gram, then fill it up with the grape juice mixture and relish this unusual Pani puri.

* Fruit Pani Puri

Ingredients

4-5 Puri’s, 1 medium sized apple (chopped into cubes), 1 small orange (peeled and remove the pith), 5-6 black grapes, 1 tsp rose syrup, 1 tsp chaat masala, 1/4 tsp cumin powder, a pinch of black salt (optional), 1/4 tsp pepper powder, 2 -3 mint leaves chopped, 1 cup fresh orange juice (add sugar, mint leaves while making orange juice). You can also include other fruits like pineapple, green grapes or any fruit you like.

Method

Mix all the ingredients together in a bowl except for orange juice because orange juice is ‘pani’ in this recipe and fruits are the stuffing…crack the one side of the puri with your thumb. Add the Fruit stuffing into the puri’s and the top it with orange juice. That’s it our fruit Pani puri is ready in no time.

* Chocolate Golgappe

Ingredients


Puris 24, Chocolate sauce 1 cup, Sweet boondi 1/2 cup, Coffee milkshake as required, Pistachios blanched and slivered 12.

Method

Take the sweet boondi in a bowl. Add chocolate sauce and mix. Fill up small glasses with coffee milkshake Break the tops of the puris slightly. Fill them up with the chocolate boondi. Garnish with pistachios. Keep a puri on top of each glass and serve. While eating you can pour the milkshake into the puris and then eat them immediately.


* Thai Pani Puri

Ingredients


30 readymade puris, 1/4 cup coconut milk powder, 1 1/4 cups milk, 1 tbsp cornflour, 2 tbsp butter, 3 cups finely chopped mixed vegetables (onions, cabbage, carrot, capsicum and baby corn),1 1/2 tbsp finely chopped green chillies, 1 tsp ginger paste, 1 tsp garlic paste, salt to taste

Method


Combine the milk, coconut milk powder and cornflour in a deep bowl and mix well using a whisk till no lumps remain. Keep aside. Heat the butter in a broad non-stick pan, add the mixed vegetables and sauté on a medium flame for 5 minutes. Add the green chillies, ginger paste and garlic paste and sauté on a medium flame for 1 minute. Add the coconut milk powder-cornflour mixture and salt, mix well and cook on a medium flame for 2 minutes, while stirring continuously. Keep the stuffing aside to cool slightly. Just before serving, re-heat the stuffing till warm. Make a hole in the centre of each puri using your thumb. Fill each puri with approx. 2 tsp of the stuffing and garnish with little spring onions. Serve immediately.

* Orange Pani Puri

Ingredients

Orange juice-1 n ½ cup, Salt to taste, Roasted cumin powder- ¼th teaspoon, Paani puri masala-1 teaspoon, Pudina chopped – 2 teaspoons, Lemon juice of ½ lemon( I used of ¼ lemon as they were very big in size), Amchur powder-1/4 teaspoon. Other Ingredients for filling are Soaked moong boiled- ¼th cup, 1 tsp roasted jeera/cumin powder, ½ tsp Chaat Masala, Salt to taste, Finely chopped coriander leaves, 1 onion finely chopped

Method

In a wide bowl take Mix all the above ingredients well and make sure everything gets incorporated well. For the filling mix ingredients 1-4 well. Take a Puri make a small whole fill the potato mixture, add a few onions and coriander leaves and then dunk them in Orange Pani. And right it goes into your mouth.
