Ingredients

1/2 cup Basmati rice
4 cups full-fat milk
1/2 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
Saffron strands, a few (optional)

Method

- Rinse the Basmati rice under running water until the water runs clear. Soak the rice in water for about 30 minutes.

- After soaking, drain the water and grind the rice to a coarse paste using a blender or food processor. Set aside.

- In a heavy-bottomed pan, bring the milk to a gentle boil over medium heat, stirring occasionally to prevent it from sticking to the bottom of the pan.


- Once the milk comes to a boil, reduce the heat to low and add the ground rice paste to the pan, stirring continuously to avoid lumps.
