Recipe - Popular Gujarati Food is Methi Thepla

This one is a popular Gujarati traditional food. It is a lightly spiced Indian flat bread that is made out of wheat flour, fenugreek leaves and spices. It is one of the various forms of staple food in northern Indian homes served either for breakfast or as a meal. In general, Paratha's or roti's can be made of maida or wheat and maybe made layered or not.



Ingredients

1 cup Wheat Flour
½ cup finely chopped Fenugreek Leaves (Methi)
3 tbsp finely chopped Coriander Leaves
¼ cup Curd (yogurt)
3-4 Green chillies, finely chopped or paste
A teaspoon asafoetida (hing)
1 tsp red chilli powder
½ tsp turmeric powder
1 tsp coriander powder
1 tsp sugar
Salt to taste
2 tbsp oil
Oil/ghee for basting

Method

* Mix all the ingredients and knead into a soft dough using enough water.

* Cover the dough with a clean muslin cloth or a plate and leave aside for 20 minutes.


* After 20 minutes, knead the dough again to smooth out using some oil on hands.

* Divide it into 8-10 equal parts.

* Start rolling the thepla's. Take one ball , dip it into dry flour. Roll it into 6-7 inch diameter approximately using rolling pin and rolling board.

* Heat the pan or tawa on medium flame. When pan is medium hot, place raw methi thepla on it.

* Roast the thepla's, turning sides and basting with ghee/oil , till golden from both sides.

* Serve hot with green chutney or tomato ketchup.
