Among these cherished dishes is Puran Poli, a quintessential treat that embodies the essence of Holi. While Puran Poli may seem complex, its preparation is actually quite simple, requiring just a few basic ingredients and a touch of culinary finesse. Here's a step-by-step guide to crafting this mouthwatering delicacy in your own kitchen:

Ingredients

For the Filling (Puran):


1 cup chana dal (split Bengal gram)
1 cup jaggery (or sugar)
1/2 teaspoon cardamom powder
A pinch of nutmeg powder
A pinch of saffron strands (optional)
2 tablespoons ghee (clarified butter)

For the Dough (Poli):

1 cup whole wheat flour
1 tablespoon ghee
A pinch of salt
Water, as needed

Method

Preparing the Filling (Puran):


- Rinse the chana dal thoroughly and soak it in water for about 2-3 hours.

- Drain the soaked dal and pressure cook it with enough water until it becomes soft and mushy. Alternatively, you can cook it in a pot on the stovetop until tender.


- Once cooked, drain any excess water and mash the dal well using a spoon or a potato masher.

- Heat ghee in a pan and add the mashed dal along with jaggery (or sugar).

- Cook the mixture on low heat, stirring continuously, until the jaggery melts and blends with the dal.

- Add cardamom powder, nutmeg powder, and saffron strands (if using), and mix well.

- Continue to cook the mixture until it thickens and comes together into a smooth, lump-free consistency. This is your Puran filling. Set it aside to cool.

Preparing the Dough (Poli):

- In a mixing bowl, combine whole wheat flour, ghee, and a pinch of salt.

- Gradually add water and knead the mixture into a soft, pliable dough.
- Cover the dough and let it rest for about 15-20 minutes.

Assembling and Cooking the Puran Poli:

- Divide the dough and Puran filling into equal-sized balls.

- Take a portion of the dough and roll it into a small circle using a rolling pin.

- Place a portion of the Puran filling in the center of the rolled dough circle.
- Gather the edges of the dough and seal the filling inside, shaping it into a ball.
- Flatten the stuffed dough ball gently and roll it out into a flatbread (poli) using a rolling pin. Be careful not to let the filling spill out.
- Heat a griddle or tawa over medium heat and cook the Puran Poli on both sides until golden brown spots appear.
- Brush with ghee while cooking for added flavor and moisture.

- Repeat the process with the remaining dough and filling to make more Puran Polis.

- Serve the Puran Polis warm with a dollop of ghee or a drizzle of milk.
