INGREDIENTS

1 kilograms cashews

500 gm figs

500 gm sugar

100 gm pistachios

10 gm green cardamom

.5 gm saffron

25 gm honey

2 large beetroot

How to make Anjeer Kaju Roll

Step 1

To prepare this recipe, take 800gms of cashews in a grinder and blend it into a thick paste. Now, put a heavy bottomed pan over a low flame and add this paste along with sugar to it. Over a low flame cook this mixture for at least five minutes. Remove from the flame, keep it aside and let it cool.

Step 2

Now repeat the same process as cashwes with figs by grinding and cooking it. Allow it to cool. Meanwhile, take out fresh juice of the beetroot and keep it aside.

Step 3

Now, take a pan and cook beetroot juice by adding cardamom powder, saffron, honey and pistachioin to it for 5 minutes. Turn off the flame and add this mixture to the cashew paste and mix well.

Step 4

Then, take a aluminium foil and spread a layer of fig paste on it using a spatula. Now, spread another layer of cashew paste over the fig paste again using a spatula. Roll them gentally and keep it in the freezer until it is hard.

Step 5

After freezing take it out from the freezer and cut into round pieces using a sharp edge knife. Serve and enjoy this dessert with your loved ones.
