Cauliflower Soup with Cream
It is said that the best time to consume vegetables is when they are "in season" and that winters are here, caulifower is one of those vegetables that can be used in multiple ways. In this recipe, we are preparing a delicious cauliflower soup that is so creamy, you would not be able to get enough of it. Made with simple kitchen ingredients like cauliflower, chives and vegetable stock, this soup is loaded with flavours and is super easy to make.
INGREDIENTS
100 gm potato
400 gm cauliflower
1 Large onion
750 ml veg stock
3 tablespoon almond
3 tablespoon sour cream
0 almond as required
0 chives as required
0 salt as required
How to make Cauliflower Soup with Cream
Step 1
Start with chopping the cauliflower, onions and potatoes and keep them to boil.
Step 2
Now to bring it to a boil, add chicken or vegetable stock, cover the pan with a lid and simmer gently on a low flame for about 25 minutes.
Step 3
Let the boiled vegetables come to room temperature and transfer in a blender. Add white pepper and salt for a nice taste, blend until soft and fine,
Step 4
If you feel the soup paste thick, you can add a little water to it, then add ground almonds and half fat cream. Blend again.
Step 5
Garnish with some toasted, sliced almonds and some chopped chives and serve.
