10 tortillas

2 tablespoon virgin olive oil

4 chicken breasts

2 cup monterey jack cheese

2 tablespoon taco seasoning

3 onion

1 red bell pepper

1 yellow bell pepper

1 capsicum (green pepper)

4 cloves garlic

4 tablespoon butter

6 tomato

1 handful cilantro

2 tablespoon jalapeno

2 tablespoon lime juice

0 salt as required

0 black pepper as required

1/2 teaspoon cayenne pepper

How to make Chicken Quesadilla

Step 1

To start preparing this recipe, start by taking all the vegetables and wash them under running water. Using a clean chopping board, chop them all up and keep aside. Then, take the chicken breasts, and cut them into cubes.

Step 2

In a large bowl, pour the olive oil, garlic, and taco seasoning along with salt and pepper according to taste. Add the chicken breast cubes in the bowl and toss them together. Let it marinate for a while.

Step 3

Now, take a pan over medium flame and heat oil in it. When the oil is hot enough, add the bell peppers, capsicum, and one onion to the pan and saute them. When the chicken has marinated, add it to the pan and cook it thoroughly.

Step 4

Next, take a skillet over low heat and add butter to it. Place a tortilla on the skillet and add the chicken and vegetable mixture on it. Grate cheese on top of it and half flip the tortilla to cook from the other side too. Repeat the process to make multiple quesadillas.

Step 5

Meanwhile, add all the remaining chopped vegetables in a bowl and season it with salt and pepper. Then, pour the lime juice on top along with the fresh cilantro and toss it all together to make Pico De Gallo.

Step 6

Transfer the Chicken Quesadilla to a serving plate and add a serving of the Pico De Gallo to the side. Pair it with guacamole and enjoy the delicious meal!
