INGREDIENTS

3 cup pitted dates

2 cup water

2 teaspoon baking soda

3 cup caster sugar

10 egg

5 cup all purpose flour

1 teaspoon vanilla extract

2 cup milk

1 teaspoon allspice

1/2 teaspoon cinnamon

1 teaspoon green cardamom

1 teaspoon baking powder

1 cup corn oil

How to make Date Cake

Step 1

Clean and wash the dates and remove the seeds or you can use pitted dates.

Step 2

Add dates and water to a bottom-heavy pot along with 1 teaspoon baking powder- bring to a boil for 1 minute, then simmer for another 5 minutes. Take the dates off the heat- let them rest until completely cooled.

Step 3

Put the dates into a mixer. Now add sugar and begin mixing at a slow speed until dates and sugar combine well. Now add oil gradually in batches.

Step 4

In a separate bowl, mix the eggs using a fork, then pass them through a conical strainer. Now add eggs into the date mixture. Blend again and once eggs are incorporated well, now add the dry ingredients.

Step 5

Take out the mixture from the grinder into a large bowl. Sift the flour, baking soda and other spices, Fold into date mixture and add the warm milk at last!

Step 6

Place one pound of the mixture into a small 8 x 4-inch baking tin greased, with baking paper and bake at pre-heated oven 160 C – 320°F 45 to 60 minutes.

Step 7

Once the cake is baked, let it cool down a bit and then take it out from the tray. Cut into pieces, garnish with a topping of your choice and serve.
