Egg Malai Curry

Bored of the usual dals and curries? Try out this unique curry recipe that is creamy and luscious in taste. Made with eggs and malai, this lip-smacking Egg Malai Curry can be prepared for either family lunch or dinner and everyone will love it for sure. To make the curry thicker, we will first grind onions, garlic, ginger, green chilli and cashews to make a paste. This paste is then cooked in milk and malai to get the perfect texture of curry. You can boil the eggs alongside to save cooking time. Once boiled, the eggs can also be shallow fried in just one spoon of oil to give them a crispy exterior. INGREDIENTS

4 egg

2 large onion

4 cloves garlic

1 inch ginger

2 green chilli

10 cashews

1/4 teaspoon asafoetida

1/2 teaspoon turmeric

1/2 teaspoon garam masala powder

0 salt as required

1 tablespoon vegetable oil

1/2 cup milk

1/4 cup fresh cream

1/2 teaspoon coriander powder

1/2 teaspoon cumin powder

How to make Egg Malai Curry

Step 1

Add roughly chopped onion, garlic, ginger, green chilli and cashews to a blender. Add 1-2 tbsp water, if needed and blend well to form a thick paste.

Step 2

Heat oil in a pan. Add asafoetida and let it splutter for a few seconds. Now add the prepared masala and cook it until it leaves the sides of the pan. Now add turmeric, coriander powder, cumin powder, garam masala powder and salt. Mix well.

Step 3

Now add milk, fresh cream and give a mix. Once a boil comes, add 1/4 cup water to adjust the consistency. Again cook it for a few minutes, until you get the desired consistency of the

Now chop the boiled eggs into halves and add them to the curry. Cook for two more minutes and switch off the flame.

Step 5

Garnish with fresh cream and serve.
