Homemade Lemon Curd
Lemon Curd is an easy recipe and is traditionally used as a topping with scones, breads, biscuits and even cakes. Used as an alternative to jam, lemon curd can also be used as a filling for cakes, small pastries, and tarts. INGREDIENTS
1/2 cup lime juice
3/4 cup granulated sugar
2 teaspoon lemon zest
100 ml condensed milk
2 tablespoon corn flour
2 tablespoon water
110 gm unsalted butter
2 drops edible food color
How to make Homemade Lemon Curd
Step 1
To prepare this easy recipe, mix together corn flour and water in a bowl and keep it aside until required. It is used as a thickening agent for any dish.
Step 2
Next, put a pan over low flame and add lemon juice in it. Stir for a minute.
Step 3
Then, add sugar to the pan. Stir to mix and depending on the tart level of lemon juice, you can add sugar. Mix well.
Step 4
Now, add lemon zest in the pan and mix once again. Stir well over low-medium flame until sugar dissolves completely. (Tip: I have added 1 teaspoon, you can add up to 2 teaspoons of it for a better taste.)
Step 5
Then, add corn flour slurry to the pan and stir once again to mix well. Bring the mixture to a boil.
Step 6
Add butter to the pan and mix well once again. Keep cooking the mixture until it turns glossy and starts thickening.
Step 7
Now, remove the pan from the heat and add condensed milk to the mixture. Mix well using a spoon.
Step 8
Add 1-2 drops of lemon yellow colour and mix well. The market-based lemon curd has a yellow colour so you can add any food colour to the curd. (Note: This is an optional step.)
Step 9
Pour the curd in a sterilized air-tight container, wrap the top with cling wrap. Once it cools to room temperature, remove the wrap, cover with a lid and refrigerate. Use it within a week. If you freeze the curd, you can use it for 2 months.
Step 10
Use this delicious lemon curd for mousse, tarts, pastries or as a substitute for jams.
