How to make Lehsooni Murgh Curry

Step 1

To start preparing this delicious main dish recipe, combine together cornstarch and beaten egg in a mixing bowl and stir well. Now, cut the chicken into bite-sized chunks and put those chunks into the cornstarch-egg mixture to marinate for about 2 to 3 hours.

Step 2

Meanwhile, heat the vegetable oil in a wok on a medium flame. When the oil is hot enough, add the marinated chicken chunks in it and shallow fry them until the pieces turn golden brown in colour. Do not put the chicken pieces altogether. Shallow fry a few pieces at a time. Transfer the fried chunks of chicken on an oil-absorbing paper to absorb excess oil.

Step 3

Now, in the same heated wok, add two more teaspoons of vegetable oil and put ginger and chilli to it. Fry them until a rich fragrance is evident. Then add slices of onion to them. Saute the onions for a minute or two till they turn soft. Put red chilli powder, salt, garlic and tomato puree into the wok and fry again for a minute. Next, cut the carrots into very thin long strips (also called julienne carrots) and add the carrot strips to the sauteed onion and garlic. Fry the entire mixture until the carrot strips tenderize.

Step 4

Add the fried chicken pieces into the wok containing the sauteed mixture and cook for a minute. Now, add soy sauce, vinegar and chicken stock to adjust your taste. (Note: if you do not have chicken stock at home, you can add the same quantity of water as well.)

Step 5

After the dish is ready, garnish beautifully with fresh cilantro leaves, drops of lime juice and green onions. You are now ready to enjoy this amazingly delicious recipe.
