Mediterranean Fish

With just a few ingredients required to make this dish, it takes about 30 minutes maximum to prepare Mediterranean Fish. This quick fish recipe can be cooked for weekend dinners or kitty parties, when you don't have enough time on your hand. The best thing about this recipe is that any whitefish fillets can be used for making this dish.

If you do not have a haddock, you can use cod fish as well, it's quite easy to prepare. Made with cherry tomatoes and capers, this fish recipe will be ready before you even look for it. So, wait no more and go for it!

INGREDIENTS

2 haddock fillet

10 cherry tomatoes

6 green olives

1 teaspoon capers

5 cloves garlic

1 red chilli

0 salt as required

0 black pepper as required

1 tablespoon virgin olive oil

4 tablespoon white wine

1/2 tablespoon unsalted butter

How to make Mediterranean Fish

Step 1

Preheat oven at 120 degrees Celsius. Wash and pat dry the fish fillets, season with salt and pepper, drizzle olive oil and set aside.

Step 2

Next, wash and cut the cherry tomatoes in half. Take a big sheet of foil which can be folded and made into a bag. Now place the fish fillets on the foil, add the garlic, then the tomatoes, red chilly if using, olives and capers, followed by wine and lastly butter. Seal nicely and bake in the oven for 15-20 minutes.

When done, take it out of the oven and let it rest for 3-4 minutes. Open the foil carefully transfer to a serving dish or individual plates and serve along with all the sauce in the foil. You can serve with a slice of toasted ciabatta to dip into the sauce, as the sauce is heavenly.
