Smoked Almond Raita
Most North Indian dishes are served with a side of raita. One of the most used accompaniments gets yet another interesting rendition. Smoked Almond raita is a unique take on the otherwise done and dusted recipe. Prepared using smoked flaked almonds mixed in yogurt with an array of spices, this recipe will definitely steal the show at any function or event.
INGREDIENTS
1/2 cup flaked almonds
1 cup yoghurt (curd)
1/2 teaspoon cumin powder
1/2 teaspoon black pepper
0 salt as required
1/2 teaspoon black salt
2 teaspoon garlic
1 teaspoon coriander leaves
2 teaspoon sunflower oil
1 tablespoon ghee
How to make Smoked Almond Raita
Step 1
To start making this one of a kind raita, first take a bowl and add yoghurt in it. Whisk it well. In the add jeera (cumin) powder, black pepper powder, salt, black salt, and roasted garlic. Mix gently.
Step 2
In another bowl, add almond flakes. Make a small bowl like structure out of the aluminum foil, and place it in the center of the bowl with almond flakes. Place 2-3 small pieces of hot coal in the aluminum foil. And pour some ghee on top of it. Immediately cover the bowl with another aluminium foil. Keep it covered fro 10-15 minutes so that the almonds are smoked properly.
Step 3
Once done, remove the foil and the coal from the almonds and add these smoked almonds to the prepared yogurt raita and mix gently. Serve the raita topped with chopped fresh coriander leaves and smoked almond flakes.
