How to Make Mysore Mixed Vegetable Curry
Step 1: Cook vegetables.
Step 2: Mix with dal add salt.
Step 3: Roast and powder chillies, urad dal, coriander, pepper.
Step 4: Add to vegetables.
Step 5:
Heat oil for seasoning; Add mustard.
Step 6: When it splutters add dal.
Step 7: When dal turns light brown, add peanuts.
Step 8: When they turn brown, remove from fire and add to the curry.
Step 9: Just before serving, crush some fried pappads and sprinkle on top.
Step 10: This curry has a consistency like thick cake batter. (like kootu)

ridge gourd - 250 gm
pumpkin - 250 gm
ash gourd - 250 gm
sweet potato - 250 gm
cooked toor dal (not very mushy) - 500 gm
black gram (urad) dal - 3 tbsp

peanuts - 2 tbsp
Garnish:
crushed papads
