It is a vegetable rich in fiber, which helps in reducing weight. This vegetable also improves digestion. Kunduru contains vitamin C and other nutrients that boost immunity. Ingredients
250 gms Kunduru
1 onion, finely chopped
2 tomatoes, finely chopped
1/2 inch ginger grated
2 green chillies, finely chopped (optional)
1/2 tsp turmeric powder
1 tsp red chilli powder
1/2 tsp coriander powder
1/4 tsp garam masala
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/4 cup oil
Salt to taste
Coriander leaves for garnishing (optional)
Recipe
- Firstly, chop the Kunduru, tomatoes, and onions. Now heat oil in a pan and add cumin seeds and mustard seeds.
- When the cumin seeds crackle and the mustard seeds puff up, add the onion and fry till golden brown.
- Add ginger and green chillies (if using) and fry for 1 minute. Add tomatoes and cook till they become soft.
- Add turmeric powder, red chilli powder, coriander powder and garam masala and mix well. Add Kunduru pieces and fry for 2 minutes.
- Add salt to taste and add 1/2 cup water. Cover with a lid and cook on medium flame for 10-15 minutes or till the kunduru becomes soft.
- Remove the lid and cook for another 2-3 minutes, so that the water evaporates. Garnish with coriander leaves and serve with hot roti or rice.
