Baked Thekua

Also known as 'Khajuria' or 'Thikari', Thekua is a popular snack from the Bihari cuisine. It is usually made by deep-frying but in this recipe, we have baked it, which makes the snack super healthy. Made with wheat flour, semolina, refined flour and jaggery, this sweet snack is not too difficult to make. All you need to do is knead a dough, make leaf-like Thekua and bake them on a tandoor. You can also add desi ghee and some fennel seeds to infuse more flavours into the recipe. Thekua can be relished as a standalone snack and can also be paired with your evening tea. INGREDIENTS

3/4 cup wheat flour

2 tablespoon semolina

2 tablespoon refined flour

1/4 cup powdered jaggery

1/4 teaspoon baking soda

1/2 teaspoon green cardamom

0 water as required

How to make Baked Thekua

Step 1

Sieve wheat flour, refined flour, semolina, baking soda and cardamom powder in a bowl.

Step 2

Melt jaggery powder in very little water on a very low flame. Switch off the gas and let it cool down a bit.

Step 3

Add melted Jaggery to sieved dry ingredients and mix well. Add some water as per need.

Step 4

Now knead it well to form a smooth dough. The dough should neither be soft nor too hard.

Step 5

Now take out small balls from the dough and give them a leaf-like shape. You can also shape them in any other form but the traditional shape of Thekua is like this.

Step 6

In order to bake them, place each piece on a preheated gas tandoor and cover the lid. Cook on low to medium heat for 10 minutes. Flip the Thekua to the other side and cook for 2 more minutes.

Step 7

Let them cool down a bit and they are ready to be served. You can also store the Thekua in an airtight container for later usage.
