100 gm button mushroom

30 gm portbello mushrooms

20 gm mushroom

15 gm porcini mushrooms

40 gm red onion

20 ml virgin olive oil

2 ml truffle oil

1 bay leaf

40 gm Arborio rice

0 vegetable broth as required

30 gm parmesan cheese

15 gm unsalted butter

How to make Cheesy Mushroom Risotto

Step 1

To prepare this recipe, wash, peel and cut them into quarters. Then boil the mushrooms for 3 minutes and refresh in cold water. Do not throw the water, you can use the mushroom water as stock.

Step 2

In a pan, heat olive oil and add a bay leaf. Now add chopped onions and cook it till translucent and add the risotto rice. Cook the rice till firm and keep adding stock gradually till the rice is cooked. Adjust seasoning as per your taste. Finish the risotto with butter and grated Parmesan cheese.

Step 3

Risotto should be consistency of soft scrambled eggs. Plate the risotto and place the mushrooms on it. Drizzle it with truffle oil
