It's the staple food of South Indians and is incredibly tasty. Yes, we are talking about Idli Sambhar, one of the most delicious and popular foods of South Indian cuisine. If you are thinking that making this recipe is difficult, then you are mistaken as it is very easy-to-make. All you need is the idli batter, which is easily available in the nearest market. However, if you want to make the batter at home then it is also easy to prepare. All you need is to ferment the rice and urad dal together for sometime and then grind to a fine paste.

INGREDIENTS

2 cup rice

1 cup urad dal

1 tablespoon fenugreek seeds

1 teaspoon granulated sugar

1 tablespoon baking soda

1 tablespoon salt

1 cup toor dal

1/4 cup refined oil

2 tablespoon chilli powder

1 tablespoon turmeric

1 tablespoon cumin powder

1 tablespoon garam masala powder

2 tablespoon tamarind

2 tablespoon coriander leaves

1 pinch asafoetida

5 cloves garlic

1 tablespoon cumin seeds

1 tablespoon mustard seeds

1 tablespoon jaggery

How to make Idli Sambhar

Step 1

To prepare this easy recipe, take a large bowl and wash rice and urad dal together in it. Soak them in water for 8-10 hours or overnight! In the morning, grind the mixture to make a fine batter, transfer to a large bowl and keep it covered for a night. In the morning, add fenugreek seeds, salt, baking soda, sugar in the mixture and mix once again.

Step 2

Add some salt to the idli batter and stir well, keep aside until required. Meanwhile, make the preparation of Sambhar. For the same, add the toor dal in a pressure cooker with enough water and cook for 2-3 whistles. Once done, add the idli batter in the mould and cook for 10 minutes. Take all ingredients ready for sambhar in the big thali. Take the cooked dal, add turmeric powder in it along with salt and sugar. Mix well and blend the dal with a wire gauze.

Step 3

Add hot water to the mixture and stir well. Now, put a pan over medium flame and heat a little oil in it. Once the oil is hot enough, add cumin seeds in it and saute for a few seconds. Next, add mustard seeds, asafoetida in it and saute for another few seconds. Finally, add garlic paste and saute until the raw smell goes away. Then, add tomatoes in it and let the mixture fry for 2 minutes. Now, add chilli powder and Maggi masala along with tamarind juice in the pan, and stir well. Let the mixture cook for another 2 minutes and then add the cooked liquid dal to it. Add the blended dal in the pan and let it boil for a few minutes. Your tasty Sambhar is ready to serve.
