To identify genuine ghee, place a small amount in your palm. Pure desi ghee begins to melt with body heat. If the ghee remains firm or takes time to melt, it is adulterated. Similarly, when you pour a spoonful of ghee into a hot pan, genuine ghee immediately melts and turns dark brown. If the ghee takes time to melt and remains pale yellow, it is likely adulterated.

Test with salt

An iodine test can be an effective way to detect adulteration of ghee with starch or boiled potatoes . To do this, take two tablespoons of melted ghee in a bowl and add two pinches of salt. If the ghee turns blue, it means it has been adulterated with ingredients like potato or rice starch. Pure ghee does not change color when iodine is added.

Water method

To distinguish between real and fake ghee, you can also use the water method. Take a glass of water and add a spoonful of ghee. If the ghee floats to the top, it's likely pure. However, if it sinks to the bottom or tries to dissolve completely, it's likely fake.
