Ingredients:

Dosa batter: 2 cups (you can buy it from the market or make it at home)

Boiled potatoes: 2-3 (well-mashed)
Onion: 1 (finely chopped)
Tomato: 1 (finely chopped)
Green chilies: 1-2 (finely chopped)
Ginger: 1 small piece (grated)
Coriander leaves: 2 teaspoons (finely chopped)
Mustard seeds: 1/2 teaspoon
Cumin seeds: 1/2 teaspoon
Turmeric powder: 1/4 teaspoon
Red chili powder: 1/2 teaspoon
Salt: to taste
Oil: as needed

Method:

First, heat some oil in a pan. Add mustard seeds and cumin seeds.

When the mustard seeds begin to crackle, add the finely chopped onion, green chilies, and grated ginger and fry until golden brown.

Now add turmeric powder and red chili powder and mix well. Then add mashed potatoes and salt and mix well.

Add coriander leaves on top and turn off the heat. Your potato masala is ready.

Now, heat a non-stick pan. Spread some oil on it. Spread the dosa batter in a circular and slightly thick layer on the pan.

Immediately spread the prepared potato masala over the batter. Also, add finely chopped tomatoes. Sprinkle some more coriander leaves on top.

Drizzle some oil on the edges of the uttapam and fry it on medium flame for 2-3 minutes until golden and crisp.

Now flip it over and fry it on the other side for 1-2 minutes. Your hot potato uttapam is ready!

Serve it with coconut chutney, sambar, or tomato ketchup. Believe me, children will be crazy about it.
