Delicious Homemade Potato Uttapam Recipe

Ingredients:
Dosa batter: 2 cups (store-bought or homemade)
Onion: 1 (finely chopped)
Tomato: 1 (finely chopped)
Green chilies: 1-2 (finely chopped)
Ginger: 1 small piece (grated)
Coriander leaves: 2 teaspoons (finely chopped)
Mustard seeds: 1/2 teaspoon
Cumin seeds: 1/2 teaspoon
Turmeric powder: 1/4 teaspoon
Red chili powder: 1/2 teaspoon
Salt: to taste
Oil: as needed
Instructions:
Begin by heating some oil in a pan. Add the mustard and cumin seeds.
Once the mustard seeds start to pop, incorporate the chopped onion, green chilies, and grated ginger, frying until they turn golden brown.
Next, mix in the turmeric and red chili powder. Then, add the mashed potatoes along with salt and combine thoroughly.
Top with coriander leaves and turn off the heat. Your potato filling is now ready.
Heat a non-stick pan and drizzle some oil on it. Pour the dosa batter in a circular shape, making it slightly thick.
Immediately layer the prepared potato filling over the batter. Add the chopped tomatoes and sprinkle more coriander leaves on top.
Drizzle oil around the edges of the uttapam and cook on medium heat for 2-3 minutes until it turns golden and crispy.
Flip it over and cook the other side for 1-2 minutes. Your hot potato uttapam is now ready to serve!
