Ingredients You’ll Need

  • 1 litre full-fat milk
  • 1 cup mango pulp
  • ½ cup condensed milk
  • ¼ cup sugar (adjust to taste)
  • ½ teaspoon cardamom powder
  • Chopped pistachios for garnish

Step 1: Reduce the Milk

Pour the milk into a heavy-bottomed pan and bring it to a boil. Lower the heat and simmer, stirring often, until the milk reduces to half. This takes about 25–30 minutes and gives kulfi its signature thick and creamy texture.

Step 2: Add the Sweetness

Mix in the condensed milk and sugar. Stir until fully dissolved and cook for another 5 minutes. Turn off the heat and let the mixture cool completely.

Step 3: Blend in Mango Goodness

Add smooth mango pulp to the cooled milk. Stir in cardamom powder and mix well. The mixture should be rich, fragrant, and beautifully golden.

Step 4: Freeze the Kulfi

Pour the mixture into kulfi moulds, small cups, or steel glasses. Sprinkle chopped pistachios on top, cover, and freeze for 6–8 hours or overnight.

Step 5: Serve and Enjoy

Dip the moulds in warm water for a few seconds and gently remove the kulfi. Garnish with extra pistachios or fresh mango cubes and serve immediately.

Easy Ways to Add More Protein

Want a healthier twist? Try these simple additions:
  • 2-3 tablespoons milk powder
  • ¼ cup hung curd
  • 1 scoop vanilla or unflavoured whey protein
These ingredients boost protein without changing the delicious mango taste.

Tips for Perfect Mango Kulfi

  • Use ripe, naturally sweet mangoes for the best flavour.
  • Always reduce the milk properly for a rich texture.
  • Freeze overnight for a firmer, creamier kulfi.
  • Add nuts for extra crunch and flavour.
