Ingredients:

1 cup plain yogurt (preferably chilled)
2 tablespoons sugar (adjust to taste)
A generous pinch of saffron strands (kesar), soaked in 2 tablespoons of warm milk
1 tablespoon crushed or finely chopped pistachios
1/2 teaspoon cardamom powder
1 cup chilled water
Ice cubes (optional)
Saffron strands and pistachios for garnish

Instructions:


Prepare the Saffron (Kesar) Milk:

In a small bowl, soak a generous pinch of saffron strands in 2 tablespoons of warm milk. Allow it to sit for about 10-15 minutes until the milk becomes infused with the saffron's color and aroma.

Blend the Ingredients:

In a blender, combine the chilled yogurt, sugar, soaked saffron milk (including the saffron strands), crushed pistachios, and cardamom powder.


Add the chilled water to the blender.

Blend Until Smooth:
Blend all the ingredients together until you achieve a smooth and creamy consistency. If you prefer a thinner lassi, you can adjust the consistency by adding more chilled water.
