- 2 cups idli rice
- 1 cup urad dal (split black gram)

- Salt to taste

Step 1 - Wash and soak the idli rice, urad dal, and fenugreek seeds in separate bowls for about 4-5 hours. After soaking, grind the urad dal to a smooth and fluffy consistency. Use minimal water for grinding.
Step 2 - Similarly, grind the rice to a slightly coarse paste. Ensure the grains are broken down but still retain a slight texture. Mix the ground urad dal and rice batter together in a large bowl.
Step 3 - Add salt to taste and mix well. The batter should be of pouring consistency, neither too thick nor too thin. Ferment the batter overnight or for at least 8-10 hours in a warm place. The fermented batter should rise and become slightly airy.
