Tiramisu is a timeless Italian dessert beloved across the globe for its rich, velvety texture and the ideal harmony of sweetness and coffee flavour. Traditionally crafted with layers of coffee-soaked ladyfingers and a sumptuous mascarpone cream, it is the sort of dessert that feels both luxurious and wonderfully comforting.

This version is packed with flavour yet far more straightforward to prepare. Having tested numerous recipes and combined the best elements, this is the ultimate rendition. It is remarkably simple to assemble and entirely egg-free, making it ideal for anyone with allergies.

Ingredients:
  • 250g ladyfingers
  • Double espresso
  • 250g mascarpone
  • 90g icing sugar
  • 500ml double cream
  • One teaspoon of vanilla extract, optional
  • Cocoa powder, for dusting
Method:

Begin by brewing your coffee and setting it aside to cool completely before dipping the ladyfingers.

Next, whip the double cream until soft peaks form. Soft peaks are where the cream is aerated enough to hold its shape briefly when a whisk is lifted, but the tip curls over and droops immediately.

Set this aside and combine the mascarpone, icing sugar, and vanilla extract in a separate bowl. Ensure everything is thoroughly mixed until well blended and loosened.

Once combined, gradually fold the mascarpone mixture into the whipped cream until fully incorporated.

Briefly dip the ladyfingers into the cooled coffee, then arrange them in your chosen dish. A 20x20 cm dish works perfectly for this quantity.

Once the base of the dish is covered with ladyfingers, spread half the cream mixture evenly over the top, then add another layer of soaked ladyfingers, and finish with a final generous layer of cream. Allow this to rest in the fridge for at least eight hours; it tastes considerably better the following day.

Before serving, lightly dust with cocoa powder, if you wish. This recipe generously serves six, though it could stretch to 12 smaller portions.

It's utterly delicious, boasting a subtle coffee flavour with a perfectly balanced sweetness throughout.
