What You’ll Need:

  • 1 liter whole milk (preferably non-UHT)
  • 2 tbsp white vinegar or lemon juice
  • Salt to taste
  • Muslin cloth or a clean kitchen towel
  • Strainer & bowl

Step 1: Heat the Milk
Pour the milk into a pot and slowly heat it on medium flame. Stir occasionally to prevent it from burning. Once it reaches a gentle simmer (around 85°C or 185°F), turn off the heat.

Step 2: Add the Acid
Slowly add vinegar or lemon juice while stirring gently. The milk will start curdling — the curds (solids) separate from the whey (liquid). Let it sit undisturbed for 10 minutes.

Step 3: Strain the Curds
Place the muslin cloth over a strainer and pour in the curdled mixture. Gather the cloth edges and squeeze out excess whey. You can hang the bundle for 30 minutes for firmer cheese.

Step 4: Season It
Unwrap the curds, transfer to a bowl, and add a pinch of salt. Mix gently. For a firmer block-style cheese, press it under a weight for a couple of hours.

Step 5: Store or Serve
You can refrigerate your homemade cheese in an airtight container for up to a week. Enjoy it on toast, in salads, or just as a creamy snack.

Tips:
  • Add herbs or spices for flavored cheese.
  • Try using goat milk for a tangier taste.
  • The leftover whey can be used in soups or doughs!

Making cheese at home is not only fun but also a wholesome way to connect with what you eat. Once you master the basics, you can experiment with textures, flavors, and styles. So go on, say cheese — and make some too!
