Focus on Fermented Foods
Chefs Munish and Puja Aggarwal are introducing the Tricity area to the idea of food that is not only tasty but also mindful and health-oriented. The couple, known for their popular eatery Back to Source Café, has shifted their attention to fermented dishes at their new establishment, Café Wellbeing, located in Sector 22. Puja emphasizes, “Fermentation is rooted in ancient practices rather than being a contemporary fad. Foods that are alive enhance digestion and help the body maintain equilibrium. We naturally ferment batters, doughs, and select drinks without using chemical additives or shortcuts.”
