A Quick Dosa Without Fermentation

Traditional dosas usually require soaking rice and dal for several hours and fermenting the batter overnight. But this viral kitchen hack skips all that waiting. With just a few basic ingredients and leftover rice, you can make crispy dosas in about 10-15 minutes. It’s perfect for busy mornings or even as a quick evening snack.

Ingredients You’ll Need

To make about 4-5 dosas, gather these simple ingredients:
  • 1 cup leftover cooked rice
  • ¾ cup rava (semolina)
  • ¾ cup curd
  • ½ cup water
  • Salt to taste

For extra flavour, you can add:

  • 1-2 chopped green chillies
  • 2-3 chopped garlic cloves
  • ½ cup grated cheese

How to Prepare the Batter

Start by adding the leftover rice, rava, curd, water, and salt to a mixer. Blend everything until you get a smooth batter that is slightly thin in consistency. Let the batter rest for about 10 minutes. This step helps the rava absorb moisture and gives the dosa a better texture.

Cooking the Crispy Dosa

Heat a non-stick pan and lightly grease it with ghee or oil. Pour a ladle of batter onto the pan and spread it gently into a thin circle. Cook on medium flame and drizzle a little ghee around the edges. When the base turns golden and crisp, sprinkle chopped garlic, green chillies, and grated cheese on top.


Serve It Hot and Fresh

Allow the cheese to melt for a minute, then fold the dosa and remove it from the pan. Serve it hot with coconut chutney or sambar for a satisfying meal. Crispy on the outside and full of flavour inside, this leftover rice dosa is an easy way to transform yesterday’s rice into today’s favourite dish.
