The mere mention of Chole Bhature makes most people's mouths water. It's considered one of North India's most favorite dishes. However, when it comes to health concerns, many people avoid eating it because Bhature is made from refined flour and deep-fried. • Two cups wheat flour
  • Half a cup of semolina
  • Half a cup of fresh yogurt
  • a teaspoon of sugar
  • 1/4 teaspoon baking soda
  • salt as per taste
  • 1 tablespoon oil (for kneading)
  • Lukewarm water as needed
  • oil for frying

How to prepare Bhatura dough

To prepare the bhatura dough, first combine wheat flour and semolina in a bowl. Then, add salt, sugar, and baking soda. Add yogurt and a little oil, mixing everything thoroughly. Add a little lukewarm water and knead into a soft dough. Be careful not to make the dough too stiff, as soft dough helps the bhaturas form well. Knead the dough thoroughly for 5 to 7 minutes to make it pliable. After kneading, apply a little oil to the surface and cover it. Let it rest in a warm place for at least 1 to 2 hours. This time, the dough will firm up slightly, allowing the bhaturas to puff up and become soft when fried.

How to fry Bhature

Once the dough has firmed, knead it lightly and form small balls. Roll each ball out to a medium thickness using a rolling pin. Try not to make the bhatura too thin, so it opens well. Heat oil in a pan. Once the oil is hot, add the bhaturas one by one and press them lightly. Within a few seconds, the bhaturas will open like balloons. Fry them until golden brown on both sides, then remove them. Hot bhaturas can be served with chickpeas, pickles, and onions.
