Step-by-Step Preparation

1. Prep the bhindi
Wash and dry the bhindi completely to avoid stickiness. Chop into small pieces.

2. Fry the bhindi
Heat 1 tbsp oil in a pan and sauté the bhindi on medium flame until it turns slightly crispy. Keep aside.

In the same pan, add remaining oil. Add mustard seeds and cumin seeds. Once they splutter, toss in curry leaves and green chilies.
