Make This Spicy North Karnataka Chutney Powder That Stays Fresh for Months

North Karnataka is famous for its long-lasting chutney powders, perfect for the hot summer months when most dishes spoil quickly. This peanut and coconut-based ‘pudi’ is easy to make, stays fresh for months, and pairs beautifully with dosa, idli, chapati, akki rotti, or even hot rice.

Ingredients You’ll Need:

  • 200g peanuts
  • 10–15 garlic cloves
  • 2 tsp cumin seeds
  • 2 tsp red chili powder
  • 10–20 curry leaves
  • 50g dry coconut
  • 50g roasted gram
  • 1/2-inch dry ginger piece
  • Coriander leaves
  • Salt to taste

How to Make It:

  • Roast the peanuts until golden, remove their skins, and set aside.
  • On low heat, roast finely chopped coconut until lightly browned. Add curry leaves and roast until crisp.
  • Coarsely crush the dry ginger.

Mixing the Chutney:

In a mixer jar, combine roasted peanuts, garlic, cumin, curry leaves, dry coconut, roasted gram, and dry ginger. Grind coarsely.

Add coriander leaves, red chili powder, and salt. Grind to a slightly finer consistency. Your North Karnataka chutney powder is ready!
