There's no need to wait for hours to enjoy a crispy dosa anymore. This instant dosa, made with semolina, yogurt, and a few spices, can be ready in just minutes. To make this delicious dosa, homemaker Priyanka suggests using one cup of leftover cooked rice, three-quarters of a cup of semolina (suji), three-quarters of a cup of fresh yogurt, two soaked Kashmiri red chilies, two large garlic cloves, salt to taste, and half a cup of water. You can also use a bit of oil or butter for cooking, along with toppings like grated cheese, chili flakes, and mixed herbs such as oregano.


Begin by placing the leftover rice, semolina, and yogurt into a blender. Add the soaked Kashmiri red chilies and garlic cloves, along with salt and a little water. Blend everything until you achieve a smooth, slightly thin batter, which will give the dosa a mild tanginess and excellent texture. Next, heat a non-stick griddle (tava) over medium heat. Once hot, pour a ladleful of batter onto the griddle and spread it in a circular motion to form a thin dosa. Drizzle some oil or butter on top and let it cook over medium heat. In just a few minutes, the underside will turn golden and crispy, making it look incredibly appetizing.


As the dosa nears completion, sprinkle grated cheese and mixed herbs like chili flakes and oregano on top. Allow it to cook a bit longer over low heat until the cheese melts and the edges start to lift from the griddle. Finally, gently fold the dosa. Your hot, crispy, and cheesy dosa is now ready to serve. Pair it with coconut chutney or sambar for a restaurant-style experience at home.
