A quick fix biryani with almost nothing at home

Running out of vegetables before the week ends is common. Instead of ordering food again, this simple recipe helps you cook a satisfying biryani in just minutes using basic pantry staples.

What you need from your kitchen

This recipe relies on everyday ingredients:
  • 2 cups basmati rice
  • 2 large onions (sliced)
  • 4 green chillies
  • 1 tbsp ginger-garlic paste
  • ½ cup yogurt
  • Mint, coriander, and curry leaves (handful)
  • Oil and ghee
  • Whole biryani spices (bay leaf, cloves, cinnamon, cardamom, etc.)
  • Red chilli powder, turmeric, coriander powder, biryani masala
  • Salt
  • Optional: potato or soya chunks for extra texture

Building the flavour base

Start by washing the rice and soaking it for 20-30 minutes. This helps it cook evenly.


Heat oil and ghee in a pressure cooker or thick pan. Add whole spices and let them release aroma. Add sliced onions and fry until deep golden brown. Toss in green chillies, followed by ginger-garlic paste. Cook until the raw smell disappears.

Now add fresh herbs, mint, coriander, and curry leaves. Mix well and add spice powders. This forms the strong flavour base of your biryani.


The secret step for real biryani taste

Lower the flame and mix in yogurt slowly. Cook until oil starts separating from the masala. This step is what gives the biryani its rich, hotel-style depth.

Now add water, around 3 to 3.5 cups for 2 cups of rice. Adjust salt so the water tastes slightly salty.

Cooking the rice perfectly

Once the water comes to a boil, add soaked rice and gently mix. Cover and cook:
  • In a pressure cooker: 2 whistles
  • In a pot: low flame until rice absorbs all water
Fluff gently once done.

Easy upgrades for extra taste

If available, add chopped potato during the onion stage for softness and flavour. Soya chunks soaked in hot water also blend in beautifully and make the dish more filling.


Serve and enjoy

Serve hot with cooling raita or spicy salan. Even with minimal ingredients, this biryani delivers rich aroma, satisfying texture, and full comfort-food vibes.
