2 large potatoes, peeled and cubed

2 green chilies, chopped
1 teaspoon cumin seeds
1 bay leaf
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon garam masala
Salt to taste
2 tablespoons oil
Fresh coriander leaves, chopped (for garnish)
Julienned ginger (for garnish)


Method:

Preparation:

Heat oil in a pan over medium heat.


Add cumin seeds and bay leaf; let them sizzle until aromatic.

Sauté Aromatics:

Introduce the sliced onions and green chilies. Sauté until the onions turn golden brown.

Add the chopped ginger and cook for another minute, releasing its aroma.


Spice Infusion:

Stir in turmeric powder, red chili powder, and coriander powder. Mix well to combine the spices with the aromatics.

Add Vegetables:

Add the potato cubes and cauliflower florets to the pan. Stir to coat them evenly with the spice mixture.

Season with salt.


Cooking Process:

Cover the pan with a lid and let the vegetables cook on low heat for about 10-15 minutes, stirring occasionally to prevent sticking.

Once the potatoes and cauliflower are tender, add the green peas. Mix well and cook for an additional 5 minutes.

Finishing Touches:

Sprinkle garam masala over the cooked vegetables and gently mix.
