Bengaluru cook’s papaya-chicken thepla recipe

In a video posted on Instagram, Rajshree, better known as Raji Didi, demonstrated the easy process of cooking the delicious meal. In the first step, the cook used grated raw papaya as the star ingredient, combining it with whole wheat flour, grated paneer for added protein, and an optional portion of minced chicken for those who prefer a heartier version.

Next, Rajshree seasoned the mixture with salt, red chilli powder, kalonji, ajwain, dhaniya powder, and freshly chopped coriander leaves, creating a flavourful dough. Using the natural moisture from the papaya, she gradually kneaded everything together, adding water only if necessary, before letting the dough rest briefly. The dough was then rolled into small theplas and cooked on a hot tawa with a little oil until perfectly golden on both sides.

To complement the wholesome thepla, Rajshree also prepared a refreshing mango chutney that perfectly captured the essence of summer. She blended ripe mango with fresh coriander leaves, mint leaves, red chilli powder, and salt to create a sweet, tangy, and mildly spicy accompaniment. The vibrant chutney added a burst of freshness to the dish, making it an ideal pairing for warm-weather meals.

The post was quick to grab attention. ‘Wow, very unique recipe. I will definitely try,’ admitted a user. ‘This is very tempting,’ noted another. One person asked Raji Didi to create a personalised meal chart for her so that she can meet her health goals. Meanwhile, a culinary enthusiast asked Raji Didi to prepare aloo paratha the next time.
