10 Delicious Things You Can Make With Leftover Rice

Leftover rice is one of those ingredients that can quietly save dinner. A container sitting in the fridge may look unexciting, but cooked rice can become fried rice , patties, stuffed vegetables, rice pudding or a quick lunch bowl with very little effort. Its neutral flavour makes it particularly adaptable, allowing you to take the meal in completely different directions with spices, vegetables, eggs or sauces. There is one important condition, however: cooked rice must be cooled and refrigerated properly. Rice can contain Bacillus cereus, and unsafe storage can allow the bacteria to multiply.

Vegetable Fried Rice

Fried rice is perhaps the most obvious transformation. Sauté garlic, vegetables and spring onions, then add cold cooked rice and a little soy sauce.

An egg stirred through the pan turns it into a more substantial meal.

Rice Cutlets

Mix rice with mashed potato, herbs and spices. Shape into patties, coat lightly with breadcrumbs and pan-fry until crisp.

They are particularly useful when you have small amounts of several leftovers.

Lemon Rice

Give leftover rice a South Indian-inspired makeover with mustard seeds, curry leaves, peanuts, turmeric and lemon juice.

It takes only a few minutes and tastes completely different from plain steamed rice.

Tomato Rice

Cook chopped tomatoes with onion, garlic and spices before stirring in the rice. A little coriander at the end adds freshness.

This is a simple way to create a complete meal from pantry basics.

Rice Stuffed Peppers

Mix rice with vegetables, herbs and cheese or cooked mince. Spoon it into halved peppers and bake until tender.

The rice absorbs the juices while the peppers become sweet and soft.

Quick Rice Bowl

Use leftover rice as the base for a bowl topped with whatever is available: roasted vegetables, beans, eggs, grilled chicken or tofu.

A spicy dressing can bring the whole thing together.

Rice Pancakes

Combine rice with eggs, spring onions and a little flour. Cook spoonfuls in a lightly oiled pan until crisp on both sides.

They work well for breakfast or a light dinner.

Rice Pudding

Not all leftover rice needs to become savoury. Simmer cooked rice with milk, sugar, cardamom and cinnamon until creamy.

Add raisins or chopped nuts for texture.

Stuffed Paratha Filling

Season leftover rice with spices, coriander and mashed potato, then use it as a filling for parathas.

It is an excellent way to give yesterday's rice an entirely new identity.

Crispy Rice Topping

Spread cooked rice thinly on a tray, season it and bake until crisp. Use the pieces as a crunchy topping for soups, salads or bowls.

Store Rice Properly

The safest approach is to cool rice quickly, refrigerate it in a covered container and use it within a few days. If rice has been left at room temperature for an extended period, it is better to throw it away than risk food poisoning.

Leftover rice is proof that good cooking does not always require a new shopping list. Sometimes the most useful ingredient is already waiting in your fridge.
