Comfort In A Bowl: How To Make Traditional Dal Dhokli

Dal Dhokli is the ultimate one-pot comfort food from the Indian states of Gujarat and Maharashtra. Ingredients

For the Dal:


  • 1 cup toor dal (split pigeon peas)
  • 2 tbsp peanuts (optional)
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • A pinch of asafoetida (hing)
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tbsp jaggery or sugar
  • 1 tbsp tamarind pulp or lemon juice
  • 1 chopped tomato
  • Salt to taste
  • Curry leaves & chopped coriander for garnish

For the Dhokli:

  • 1 cup whole wheat flour
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp carom seeds (ajwain)
  • 1 tbsp oil
  • Salt to taste
  • Water to knead

Method


Cook the Dal: Wash toor dal and pressure cook with 2.5 cups water and peanuts until soft. Mash well.

Prepare the Dhokli Dough: Mix wheat flour, turmeric, chili powder, ajwain, salt, and oil. Knead into a firm dough. Rest it for 10 minutes.

Roll and Cut Dhokli: Roll out small portions of dough into thin discs. Cut into diamond or square shapes.

Temper the Dal: In a large pan, heat oil. Add mustard seeds, cumin seeds, asafoetida, curry leaves, and tomatoes. Sauté for 2–3 minutes.


Simmer the Dal: Add mashed dal, 2 cups water, turmeric, chili powder, jaggery, tamarind pulp, and salt. Bring to a boil.

Add Dhokli Pieces: Gently add cut dhokli pieces one by one into the simmering dal. Stir occasionally to prevent sticking.

Cook Together: Cover and cook on medium heat for 15–20 minutes until the dhokli becomes soft and cooked through.

Garnish and Serve: Add fresh coriander. Serve hot with a drizzle of ghee, sliced onions, or a side of pickle.
