Ingredients Required

For the vegetable mixture:

  • 3 medium-sized potatoes
  • ½ cup finely chopped carrots
  • ½ cup green peas
  • ½ cup finely chopped beans
  • 1 small onion, finely chopped
  • 1 green chilli, finely chopped
  • ½ teaspoon ginger paste
  • ½ teaspoon cumin seeds
  • ½ teaspoon red chilli powder
  • ½ teaspoon garam masala
  • ½ teaspoon coriander powder
  • ½ teaspoon dry mango powder
  • 2 tablespoons chopped coriander leaves
  • Salt to taste
  • 2 tablespoons breadcrumbs, if required
For the coating:

  • ½ cup all-purpose flour
  • ½ cup water
  • 1 cup breadcrumbs
  • Oil for shallow frying

Step 1: Boil and Prepare the Vegetables

Wash the potatoes, carrots, beans and green peas. Boil the potatoes until they become soft, then peel and mash them in a large bowl.

Cook the carrots, beans and peas until tender but not mushy. Drain any excess water and allow the vegetables to cool. Keeping the mixture relatively dry is important for making cutlets that hold their shape.

Step 2: Prepare the Spiced Vegetable Filling

Heat a teaspoon of oil in a pan and add cumin seeds. Once they begin to crackle, add the chopped onion, green chilli and ginger paste.

Sauté until the onion becomes soft. Add the cooked carrots, beans and peas, followed by red chilli powder, coriander powder, garam masala, dry mango powder and salt.

Mix everything well and cook for a few minutes. Add the mashed potatoes and fresh coriander leaves. Combine the ingredients until they form an even mixture.

Step 3: Shape the Cutlets

Allow the vegetable mixture to cool completely. If it feels too soft or sticky, add a little extra breadcrumbs to improve its consistency.

Take a small portion and shape it into a round, oval or flattened patty using your palms. Repeat with the remaining mixture and keep the cutlets on a plate.

Step 4: Prepare the Coating

Take all-purpose flour in a bowl and gradually add water to make a smooth, moderately thick slurry. Make sure there are no lumps.

Spread breadcrumbs on a separate plate. Dip each cutlet into the flour mixture and then coat it evenly with breadcrumbs. Press gently so that the crumbs stick properly to the surface.

Step 5: Shallow Fry Until Golden and Crispy

Heat oil in a flat pan over medium heat. Place the prepared cutlets carefully into the pan, leaving some space between them.

Cook each side until golden brown and crisp. Turn them gently using a spatula so that they do not break. Once cooked, transfer the cutlets to a plate lined with kitchen paper to remove excess oil.

Tips to Make Perfect Crispy Vegetable Cutlets

  • Drain excess water from boiled vegetables before preparing the filling.
  • Allow the mixture to cool before shaping the patties.
  • Add breadcrumbs if the filling feels too soft.
  • Keep the oil at a moderate temperature to ensure even cooking.
  • Avoid overcrowding the pan while frying.
  • For extra crunch, apply a second layer of flour slurry and breadcrumbs.
