For binding, use 2 tablespoons of cornflour and 2 tablespoons of breadcrumbs.


For the outer coating, keep 4 tablespoons of plain flour, enough water to make a smooth batter and around 1 cup of breadcrumbs ready.

You will also need oil for frying, or a little oil if you are using an air fryer.

Prepare the Potato Mixture

Add coriander, chilli flakes, black pepper, mixed herbs, salt, cornflour and breadcrumbs. Mix everything thoroughly.


The mixture should be soft but firm enough to hold its shape. If it feels too wet, add another tablespoon of breadcrumbs.

Add the Cheese Centre

Take a small portion of the potato mixture and flatten it gently in your palm.

Place a small cube of cheese in the centre and carefully bring the potato mixture around it. Roll between your palms until you have a smooth ball and make sure the cheese is completely enclosed.

This step is important because exposed cheese can leak out during cooking.

Repeat with the remaining mixture and cheese.


Coat the Potato Balls

Prepare a smooth batter by mixing plain flour with water. Keep the consistency slightly thick so it coats the potato balls evenly.

Dip each ball into the batter, allowing any excess to drip off. Immediately roll it through breadcrumbs until completely covered.

For an extra-crispy exterior, repeat the batter and breadcrumb coating once more.

Place the coated balls on a plate and let them rest for a few minutes before cooking.

Fry Until Golden

Heat oil over medium heat. Test it by dropping in a small piece of breadcrumb. It should rise gradually and sizzle without immediately turning dark.


Carefully place a few potato balls into the hot oil. Avoid overcrowding the pan because this can lower the oil temperature and make the coating greasy.

Fry until the balls turn evenly golden and crisp. Remove them with a slotted spoon and place them on kitchen paper to absorb excess oil.

Air Fryer Method

For a lower-oil version, preheat the air fryer to around 190°C.

Place the coated potato balls in the basket with a little space between each one. Lightly brush or spray them with oil and cook for around 10 to 14 minutes, turning them halfway through.

Cooking time can vary between air fryers, so keep an eye on the coating towards the end.


How to Keep the Cheese From Leaking
