- Arrowroot powder – 50 gm
- Sugar – 300 gm
- Water – 300 gm
- Sugar syrup – 600 gm
- Fennel seeds (saunf) – ½ tsp (slightly crushed)
- Cardamom powder – ½ tsp
- Ghee – for frying
- Nuts – for garnish
Method:
- Mix dry ingredients: Combine flour, arrowroot powder, fennel seeds, and cardamom in a bowl.
- Prepare batter: Gradually whisk in water to make a smooth, pourable batter, similar to pancake consistency.
- Make sugar syrup: Boil sugar, water, and crushed cardamom until slightly sticky.
- Cook malpua: Heat ghee, pour small ladles of batter, and cook until golden and crisp.
- Soak and serve: Dip malpuas in sugar syrup briefly. Serve warm or chilled, garnished with rabri and nuts.

- ½ tsp red chilli powder
- ½ tsp garam masala
- ½ tsp chaat masala
- 2 tbsp fresh coriander, chopped
- Salt, to taste
- Oil, for shallow frying
- Green chutney and tamarind chutney, for serving
Instructions:
- Mix mashed potatoes with onion, green chilli, ginger paste, spices, coriander, and salt.
- Trim bread edges, place potato mixture in centre, seal edges, and flatten into tikkis.
- Shallow fry until golden brown and crispy.
- Serve hot with green chutney and tamarind chutney on the side.
