Looking For A New Chutney? Try This Easy Brinjal Chutney Recipe At Home

If brinjal is not usually your favourite vegetable, this chutney might change your mind. Roasted brinjal is blended with onion, tomato, garlic, dried red chillies, coconut and tamarind to create a chutney packed with smoky, tangy and mildly spicy flavours. It is easy to prepare and makes a delicious side dish for everyday meals.

Ingredients You Need

For the chutney:

  • 2 brinjals
  • 1 large onion
  • 1 tomato
  • 3 dried red chillies
  • 4 garlic cloves
  • A small gooseberry-sized piece of tamarind
  • 2 tablespoons grated coconut
  • Salt to taste
  • 2 teaspoons oil
For tempering:


  • ½ teaspoon mustard seeds
  • ½ teaspoon urad dal
  • A few curry leaves
  • A little oil

How To Make Brinjal Chutney

Roast The Brinjal

Cut the brinjals into small pieces. Heat oil in a pan and sauté them until they become soft and lightly roasted. Remove them from the pan and keep aside.

Cook The Spices

Using the same pan, add a little more oil. Add chana dal, urad dal, dried red chillies and garlic. Sauté for a few moments until fragrant.


Add the chopped onion, tomato and tamarind. Cook everything together until the onion and tomato soften.

Grind The Chutney

Allow the cooked ingredients to cool slightly. Transfer them to a mixer along with the roasted brinjal, grated coconut and salt.

Add a little water and grind until you get a slightly coarse chutney. Avoid making it completely smooth if you want a more rustic texture.

Add The Tempering

Heat a little oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and switch off the heat.


Pour the hot tempering over the prepared brinjal chutney and mix lightly.

How To Serve

Serve the chutney fresh with hot idli, dosa or roti. It also pairs wonderfully with hot rice. For a simple and flavourful meal, mix it with rice and a little sesame oil.
