Easy South Indian Lemon Rice Recipe With Peanuts
A useful everyday recipe does not always need a long list of ingredients. Lemon rice is a popular South Indian preparation that combines cooked rice with lemon juice, curry leaves, spices and a tempering that adds aroma and texture. It can be prepared with freshly cooked rice or suitable leftover rice, making it a practical choice for busy mornings and quick lunches. Peanuts add crunch, while turmeric gives the dish its familiar yellow colour. The recipe is easy to customise according to the ingredients available in your kitchen, and it can be served on its own or alongside a simple vegetarian side dish.
You can also use chopped green chilli, grated ginger or a small quantity of split urad dal and chana dal if available.
If using leftover rice, make sure it has been stored safely in the refrigerator. Rice should not be left at room temperature for long periods because harmful bacteria can multiply. Reheat it thoroughly during preparation.
Add the dried red chilli, curry leaves, turmeric and asafoetida if using. If adding green chilli or ginger, cook briefly. Keep the flame moderate to prevent the spices and curry leaves from burning.
Turn off the heat and allow the rice to cool slightly before adding lemon juice. Stir well, taste and adjust the amount of lemon according to your preference.
Adding lemon juice towards the end helps preserve its fresh, tangy flavour.
For extra flavour, garnish with chopped coriander. Adjust the chillies and lemon juice to suit your taste.
