Before we dive into the cooking process, let's gather the essential ingredients for making Atta Momos
- 1 cup whole wheat flour (atta)
- Water, as needed
- Salt, to taste
- 200g lean minced chicken or paneer (cottage cheese) for a vegetarian option
- Finely chopped vegetables (such as carrots, cabbage, and bell peppers)
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 green chilli, finely chopped (adjust to taste)
- Soy sauce, to taste
- Black pepper, to taste
- Olive oil or cooking spray
- Prepare the Dough: In a large mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water and knead until you achieve a smooth, elastic dough. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
- Prepare the Filling: While the dough is resting, prepare the filling. In a separate bowl, combine the minced chicken or paneer with finely chopped vegetables, minced garlic, grated ginger, chopped green chilli, soy sauce, and black pepper. Mix well to ensure the flavours are evenly distributed.
- Shape the Momos: After the resting period, divide the dough into small equal-sized portions. Roll each portion into a small circle, ensuring it is thin yet sturdy enough to hold the filling. Place a spoonful of the prepared filling in the centre of each circle.
- Fold and Seal: To shape the momos, gently bring the edges of the circle together, pleating and sealing them to form a half-moon shape. Ensure the edges are firmly sealed to prevent the filling from leaking during steaming. Repeat the process with the remaining dough and filling.
- Steam the Momos: Once all the momos are shaped, prepare a steamer by bringing water to a boil. Lightly grease the steamer tray with olive oil or cooking spray to prevent the momos from sticking. Arrange the momos on the steamer tray, leaving some space between each dumpling to prevent them from sticking together.
- Steaming Process: Place the steamer tray over the boiling water and cover with a lid. Steam the momos for approximately 12-15 minutes or until the dough is cooked through and the filling is tender and cooked.
- Serve and Enjoy: Once steamed, transfer the hot momos to a serving plate. Serve them with a dipping sauce of your choice, such as soy sauce, chilli sauce, or a tangy tomato chutney.
- High Protein Content: Lean chicken or paneer provides a protein boost, essential for muscle repair and recovery post-workout.
- Whole Wheat Goodness: Using whole wheat flour adds fibre and complex carbohydrates, promoting sustained energy levels.
- Low in Fat: By steaming instead of frying, these momos are lower in fat, making them a healthier snacking option.
- Versatile and Customisable: You can customise the filling with your favourite vegetables and protein sources to suit your dietary preferences and fitness goals.
