  • 3 ripe bananas, mashed
  • 125 g butter, melted
  • 150 g sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 190 g plain flour
  • A pinch of salt

For the crumb topping:



  • 50 g flour
  • 40 g brown sugar
  • 30 g cold butter, in small cubes

Method


  1. Heat the oven to 190°C. Line a muffin tray with paper cases.
  2. Mix the mashed bananas, melted butter, sugar, egg, and vanilla in a bowl.
  3. In another bowl, mix flour, baking powder, baking soda, and salt.
  4. Add the dry mix to the banana mix. Stir lightly until combined. Do not overmix.
  5. For the crumb, rub flour, brown sugar, and cold butter with your fingers until it looks crumbly.
  6. Fill muffin cases three quarters full. Sprinkle crumb mix on top.
  7. Bake for 18 to 22 minutes. A toothpick should come out clean.
  8. Cool on a wire rack before eating.
