How To Make Banana Stem Poriyal With A Crisp Texture And Fresh Coconut

Newspoint
Banana stem is often overlooked in everyday cooking, despite its crisp texture and mild flavour. Known as vazhaithandu in parts of South India, it can be turned into a simple poriyal with coconut, curry leaves and a gentle tempering. The dish pairs particularly well with rice, sambar and rasam.

Preparing the stem takes a little patience because its outer layers and fine fibres need attention. Once cleaned and chopped, however, it cooks relatively quickly. The aim is to soften the pieces without making them mushy, allowing the vegetable to retain a pleasant bite in the finished dish.

Ingredients and preparation

For three to four servings, use about two cups of chopped banana stem, three tablespoons of grated fresh coconut, half a teaspoon of mustard seeds, one teaspoon of urad dal, one dried red chilli, a few curry leaves, a pinch of turmeric, salt and one tablespoon of oil. Keep some lemon juice or diluted buttermilk ready.

Remove the tough outer layers of the banana stem until the tender inner portion is exposed. Slice it into thin rounds, removing visible fibres as they appear. Stack the rounds and chop them into small pieces. Place them in water mixed with a little lemon juice or buttermilk to slow discolouration.

Cook the poriyal

Heat oil in a pan and add mustard seeds. Once they begin to crackle, add urad dal and the dried chilli. Stir until the dal turns lightly golden, then add curry leaves.

Drain the chopped stem and add it to the pan with turmeric and salt. Mix well, cover and cook over a medium-low flame. Add a small splash of water if the mixture begins sticking. Stir occasionally and check the texture after about 10 minutes. The pieces should become tender but retain a little firmness.

Finish with coconut

Once the banana stem is cooked, remove the lid and allow excess moisture to evaporate. Add grated coconut and mix gently for another minute. Taste and adjust the salt before switching off the heat.

Serve the banana stem poriyal recipe with steamed rice, dal or a simple vegetable curry. Avoid cooking it for too long, as excessive heat can make the pieces lose their characteristic crunch.

Freshly grated coconut gives the dish a pleasant finish, while curry leaves add fragrance. If preparing the vegetable in advance, keep the cleaned pieces refrigerated in a covered container and cook them soon afterwards. This straightforward vazhaithandu poriyal is a useful way to introduce a less frequently used vegetable into a regular vegetarian meal.
