How to Make Beetroot Raita That Adds Colour to Your Lunch or Dinner

Newspoint
Beetroot raita brings colour and a mildly earthy sweetness to an everyday meal. The combination of cooked beetroot and yoghurt creates a creamy side dish that works well with rice, roti, pulao or a simple vegetarian thali. It requires only a handful of ingredients and can be prepared without complicated cooking techniques.

The main trick is to cool the beetroot before mixing it with yoghurt. Adding it while hot can affect the consistency of the dairy, while excessive stirring may make the mixture watery. A balanced seasoning of roasted cumin, salt and fresh herbs allows the ingredients to complement each other without overwhelming the flavour.

Ingredients for beetroot raita

For a small bowl, prepare one medium beetroot, around 200 grams of plain yoghurt, a pinch of roasted cumin powder, salt and a little chopped coriander. A small amount of finely chopped green chilli is optional if you enjoy a sharper flavour.

Adjust the quantities according to the number of people being served. Thick, plain yoghurt gives the raita a creamier consistency, while thinner yoghurt produces a looser mixture. If the yoghurt is very sour, start with a smaller quantity of seasoning and taste before adding more.

Prepare the beetroot properly

Wash the beetroot and trim its ends. Boil or steam it until a knife can pass through the flesh without much resistance. Cooking time depends on the size of the vegetable, so check it rather than relying on a fixed time.

Allow it to cool completely before peeling and grating. A coarse grater gives the raita some texture, while finer grating distributes the beetroot more evenly through the yoghurt. Use a clean chopping board and avoid staining other ingredients by preparing the beetroot separately.

Mix and season the raita

Whisk the yoghurt gently in a bowl until smooth. Add the cooled beetroot and fold it through with a spoon. Sprinkle in roasted cumin powder and salt, then taste before adding any chilli or extra seasoning.

Finish with chopped coriander if desired. Keep the mixture thick enough to serve comfortably with a spoon. If it appears watery, check whether the yoghurt itself was thin before adding more ingredients.

Serving and storage tips

Serve beetroot raita alongside vegetable pulao, stuffed parathas or a simple rice-and-dal meal. It can also be offered as a cooling accompaniment to spiced vegetarian dishes.

Refrigerate leftovers promptly in a covered container and use a clean spoon when serving. For the best texture, prepare a fresh batch when possible rather than leaving the raita at room temperature for extended periods. Avoid freezing it, as the yoghurt may separate and become grainy after thawing.
