- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
1. Preparation
- Rinse the moong dal thoroughly under running water until the water runs clear.
- Soak the dal in water for about 30 minutes to an hour. This helps in faster cooking.
- After soaking, drain the water from the dal and set it aside.
- In a pressure cooker, add the soaked moong dal along with 2 cups of water.
- Pressure cook the dal for about 2-3 whistles or until it is soft and well-cooked.
- Once done, mash the dal lightly with the back of a spoon or a potato masher. Set it aside.
- Heat ghee in a pan over medium heat.
- Add mustard seeds and let them crackle.
- Then, add cumin seeds, asafoetida, green chilli, grated ginger, curry leaves, and dry red chillies. Sauté for a minute until fragrant.
- Lower the heat and add turmeric powder, coriander powder, and red chilli powder to the tempering. Mix well.
- Quickly add the cooked moong dal to the tempering and stir to combine.
- Add grated jaggery and salt to the dal. Stir well to incorporate.
- Allow the dal to simmer for a few minutes, allowing the flavours to meld together.
- Once the dal reaches your desired consistency, turn off the heat.
- Garnish with freshly chopped coriander leaves.
- Serve hot with steamed rice or roti, along with lemon wedges for an extra burst of tanginess.
