- 1 cup yellow moong dal (split yellow lentils), washed and soaked for 2-3 hours
- 2 cups whole wheat flour (atta)
- 1 onion, finely chopped
- 1 green chilli, finely chopped (adjust to taste)
- 1 teaspoon ginger-garlic paste
- ½ teaspoon cumin seeds
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder (adjust to taste)
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- Salt, to taste
- Fresh coriander leaves, chopped
- Ghee or oil, for cooking
- Cook the Moong Dal: In a pressure cooker, add the soaked moong dal along with enough water to cover it. Cook for 2-3 whistles or until the dal is soft and cooked through. Once cooked, drain any excess water and mash the dal using a potato masher or the back of a spoon. Allow it to cool slightly.
- Prepare the Dough: In a large mixing bowl, combine the whole wheat flour with a pinch of salt and knead it into a smooth, pliable dough using water as needed. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
- Prepare the Filling: In a separate bowl, mix together the cooked moong dal, finely chopped onion, green chilli, ginger-garlic paste, cumin seeds, turmeric powder, red chilli powder, coriander powder, garam masala, chopped coriander leaves, and salt to taste. Ensure all the ingredients are well combined to create a flavourful filling for the parathas.
- Divide the Dough: After the resting period, divide the dough into equal-sized portions and roll them into balls. Similarly, divide the prepared moong dal filling into portions, making sure they are slightly smaller than the dough portions.
- Assemble the Parathas: Take one portion of the dough and flatten it slightly with your palms. Place a portion of the moong dal filling in the centre of the dough and bring the edges together to seal it, ensuring the filling is completely enclosed within the dough.
- Roll Out the Parathas: Dust the stuffed dough ball with some dry flour and gently roll it out into a round disc, using a rolling pin. Be careful not to apply too much pressure as the filling might spill out. Roll out the paratha to your desired thickness, ensuring it's evenly rolled out.
- Cook the Parathas: Heat a tawa or griddle over medium heat and place the rolled-out paratha on it. Cook for a minute or two on one side until you see small bubbles forming, then flip it over and cook the other side. Apply ghee or oil on both sides of the paratha and cook until it turns golden brown and crisp.
- Serve Hot: Once cooked, transfer the hot Moong Dal Paratha onto a serving plate. Repeat the process with the remaining dough and filling. Serve the parathas hot with a dollop of butter, yoghurt, or pickle on the side.
- Ensure the moong dal is cooked until soft and mushy for a smooth filling.
- Seal the edges of the stuffed dough properly to prevent the filling from oozing out while rolling.
