How to Make Soft, Fluffy Vegetable Poha Without Turning It Soggy

A bowl of vegetable poha makes a quick breakfast when you want something warm, savoury and filling without spending a long time in the kitchen. Flattened rice softens quickly, while onion, peas, carrots and peanuts add flavour and texture. The recipe is flexible, so you can use vegetables already in the fridge instead of buying special ingredients.
Vegetable Poha at Home: Ingredients, Cooking Steps and Tips for Better Texture

The key to good poha is gentle cooking: rinse the flakes briefly, let them soften, and avoid stirring too aggressively. With a few everyday spices and a squeeze of lemon, this easy poha breakfast can be ready in around 20 minutes, including preparation.

Ingredients for vegetable poha

For two servings, use about two cups of thick or medium flattened rice, one small onion, half a cup of mixed vegetables, two tablespoons of roasted peanuts, one green chilli if desired, a teaspoon of mustard seeds, a few curry leaves, a pinch of turmeric, oil, salt and half a lemon.

Choose peas, finely diced carrot or beans. If using frozen peas, thaw them first or allow a little extra cooking time. Thick poha generally holds its shape better than very thin flakes, which can turn mushy if soaked for too long.

How to make it

Place the flattened rice in a sieve and rinse it briefly under running water. Drain well, then leave it for five minutes to soften. The flakes should bend easily but should not become a paste. If they still feel firm, sprinkle over a little water rather than soaking them again.

Warm a little oil in a pan. Add mustard seeds and let them pop, then stir in curry leaves, chopped chilli and onion. Cook until the onion softens. Add the vegetables, turmeric and salt, then cover and cook until the vegetables are tender, adding a spoonful of water if needed.

Lower the heat and fold in the softened poha and peanuts. Mix gently so the flakes remain separate, cover for two to three minutes, then switch off the heat. Finish with lemon juice and coriander. Taste before serving and adjust the seasoning.

Make it your own

For a more substantial breakfast, serve poha with plain yoghurt or a side of fruit. You can add cooked sweetcorn or grated vegetables, but keep pieces small so they cook quickly. Peanuts provide crunch, though they should be left out for anyone with a peanut allergy.

This Indian vegetarian breakfast is best eaten freshly made, when the texture is soft but not soggy. If preparing ingredients ahead, chop the vegetables and measure the spices in advance, but rinse the flattened rice only shortly before cooking. That small step helps preserve the light texture that makes a good vegetable poha recipe .
