Popular in South Indian cooking, lemon rice can be served as a main dish or packed for lunch. It is also a convenient way to use safely stored leftover rice, provided the rice has been handled and refrigerated correctly.

Ingredients for homemade lemon rice

For two servings, you will need:

  • 2 cups cooked rice
  • 1 to 2 tablespoons lemon juice, adjusted to taste
  • 2 tablespoons roasted peanuts
  • 1 tablespoon oil
  • Half a teaspoon mustard seeds
  • 1 teaspoon split urad dal
  • 1 teaspoon chana dal
  • 1 green chilli, chopped
  • 8 to 10 curry leaves
  • A pinch of turmeric
  • A pinch of asafoetida, if desired
  • Salt to taste
  • Fresh coriander leaves
You can adjust the chilli and lemon juice according to your preference.

Prepare the rice

Cook the rice until the grains are tender but not mushy. Allow it to cool enough to handle and separate the grains gently with a fork.

If you are using leftover rice, refrigerate it promptly after cooking and reheat it thoroughly before serving. Do not leave cooked rice at room temperature for extended periods.

For the best texture, avoid adding too much water while cooking the rice. Firm, separate grains make it easier to mix the seasoning evenly.

Make the tempering

Heat the oil in a pan over a medium flame. Add the mustard seeds and allow them to splutter.

Add the urad dal and chana dal, stirring until they begin to turn golden. Add the chopped green chilli and curry leaves carefully, as fresh curry leaves can cause hot oil to splutter.

Stir in the turmeric and asafoetida, if using. Add the peanuts and mix briefly to combine the ingredients.

Keep the heat moderate to prevent the lentils and peanuts from burning.

Combine the ingredients

Add the cooked rice to the pan and mix gently so the tempering coats the grains. Add salt and stir until evenly distributed.

Switch off the heat before adding the lemon juice. Mixing the juice into the rice after cooking helps preserve its fresh, tangy flavour.

Taste and adjust the seasoning. If you prefer a stronger citrus flavour, add a little more lemon juice. Finish with chopped coriander leaves.

What to serve with lemon rice

Lemon rice can be enjoyed on its own or paired with cucumber salad, plain curd or a simple vegetable side dish. Roasted papad can add another crunchy element to the meal.

For a different variation, add grated carrot or a small quantity of cooked green peas. Keep the additions modest so that the lemon flavour remains prominent.

The recipe is easy to customise, but its appeal comes from the contrast between soft rice, crunchy peanuts, aromatic curry leaves and fresh citrus. With a few pantry staples, it makes a practical addition to a weekly vegetarian menu.
